Simple Zucchini Cauliflower Stir Fry

Simple and delicious zucchini cauliflower stir fry recipe. It’s one of my favorites to serve for dinner when you want a healthy easy on the stomach meal. Can both be perfect for people following a vegan diet. It’s also low on carbs and keto-friendly.

How To Cook Zucchini & Cauliflower Stir Fry

I always love to start of with the ingredients. Chop up zucchini into small bits. Do the same with cauliflower. Dice the onions. I love to grate the carrot on larger grater because it’s simple and easy to do so. Everything you need for this recipe is here in the image bellow.

Fry Carrots And Onions

Preheat a large skillet on medium to high. Stir both onions and carrots until the onions turn golden brown.

Stir onions and carrots.

Add Cauliflower

Add cauliflower into the mix and cook for another 10 minutes or so. You want it to cook a little longer because it’s more dense than zucchini.

Add cauliflower to the mix.

Add Seasoning and Zucchini

Next add salt, pepper and seasoning based on your taste. Throw in zucchini and cook for another 3-5 minutes.

The End Result

In the end you’ll have a simple and delicious meal that you can serve for lunch and dinner. Store it in the fridge and reheat it in the microwave.

Cook for 3-5 more minutes.

  • 2-3 zucchini

  • 1 carrot

  • 300g (1/2 head) cauliflower

  • 1 onion

  • 2 tbsp vegetable oil

  • 2 tbsp tomato paste

  • seasoning


  • Heat a large skillet over medium-high heat with oil in it.
  • Add and stir onions with carrots for 5 minutes.
  • Add cauliflower and stir occasionally. Cook for 10 more minutes on low heat.
  • Stir in tomato paste with seasoning based on your taste.
  • Add zucchini to the mix with salt and pepper. Let it cook for another 3-5 minutes. Stir occasionally.


  • Mix and stir occasionally for best result.
