This simple yet delicious chicken zucchini lasagna requires minimum effort and is a perfect dish that can be consumed for lunch and dinner. It’s low on carbs and calories and is perfect for those on a diet.

I personally love this style of lasagna. The grounded chicken is light on stomach and is full of protein. Although my children aren’t super fans of healthy eating, they really don’t mind this one because the zucchini combined with grounded chicken is a perfect mix. Plus the cheese on top just makes everything takes even more rich in flavor.

How To Cook a Zucchini Lasagna With Chicken

I love to start each and every recipe by preparing the ingredients I need for it. In this case it’s pretty simple. I’ve got everything you need shown in the photos bellow.

Slice The Zucchini Lasagna Layers

For this you need to slice thin layers of zucchini to use them as the lasagna sheets. For this recipe I don’t go crazy about drying them or anything. I love my food to be delicious and juicy.

The Chicken Zucchini Lasagna Sauce

Before you make the sauce you also want to grate the cheese. You don’t have to use the fine side of the grater. Use the bigger one instead. The cheese is going to melt in the oven evenly in any case.

For the sauce you want to first grate the garlic cloves on fine side of the grater. This will make it less visible in the sauce unlike if you would have chopped it up. Then mix the garlic, egg and yogurt in a separate bowl.

Prepare The Ground Chicken

Just like with any chicken recipe. You want to prepare it first to eliminate any potential bacteria. This process also makes the chicken taste delicious. It’s going to form small curds and intermix with carrots and onions for rich and tasty flavor.

Grate the carrots and dice the onions. Cook them on a skillet on medium heat setting then dump the ground chicken. Let everything cook for 10 minutes or so.

The Chicken Zucchini Lasagna Layers

Start of by taking a deep baking dish. I have a glass one. Put a quarter of the sauce on the bottom and place the first layer of zucchini on top. Use a third of all zucchini.

Cover the zucchini with half of the cooked ground chicken. Add another layer of sauce (1/4 of the original bowl again).

Repeat the process: add a layer of zucchini (1/3); add the second half of ground chicken; put a quarter of the sauce.

The Final Layer

For the last layer you want to place the last layer of zucchini. Then empty the remaining sauce on top and cover everything evenly with cheese.

Cooking The Lasagna

Cook the lasagna in the oven at 350F for 50-60 minutes. The cheese should turn golden brown by that time. That’s when it’s ready. Let the zucchini lasagna cool down a little first and then serve in slices.

  • Use 1/4 of the total yogurt each time it’s required.
  • Use a deep glass baking dish or an alternative.
  • You want to have 3 layers of zucchini so make enough slices for that. In my case I used 3 layers of 4 slices. So I had to make 12 slices from 2 zucchinis. In other words I cut each zucchini into 6 slices.


What kind of cheese can I use?

You can use any type of cheese you have in the fridge at the time of cooking. I had mozzarella so that worked well.

This simple, easy, and delicious chicken zucchini lasagna recipe is also low on carbs and calories. It’s a healthy meal that you can cook for lunch or dinner. Your entire family will love it.


  • 500g ground chicken

  • 1 onion

  • 1 carrot

  • 300g original yogurt

  • 1 egg

  • 100g cheese

  • 3 cloves of garlic

  • 2 tbsp oil (sunflower)

  • 2-3 medium zucchini


  • Preheat the oven to 350F.
  • Take a skillet and fry the onions with carrots on medium heat until golden brown.
  • Add ground chicken to the mix and let everything cook for 10 minutes.
  • Cut zucchini into long flat slices to form the pasta sheets.
  • Grate the garlic cloves on smallest side and mix it in a bowl with yogurt and an egg. Shred the cheese in a separate bowl.
  • Take a deep baking dish and form the first layer of lasagna by putting 1/4 of yogurt sauce on the bottom. Place the zucchini next and then add half of the prepared ground chicken.
  • Repeat the same step by putting yogurt 1/4 of yogurt on the previous layer. Then add zucchini then put the other half of ground chicken.
  • Put another 1/4 of yogurt on top of the second layer. Cover with zucchini again.
  • Place remaining (1/4) of yogurt on top of zucchini and cover evenly with grated cheese.
  • Bake in oven for 50-60 minutes until the cheese turns golden brown.


  • Let the leftovers cool down. Cover with plastic food wrap and store in the fridge. Reheat in the microwave.
