How To Cook Eggplant Chicken Breast Lasagna

I start with preparing all of the ingredients that are necessary for this recipe. Here in the photo bellow you can see that I’ve got all of the ingredients required. There are only two things out of the frame: salt and pepper. Let’s begin.

Cut the eggplant into slices of 5mm. The goal is to form 6 thin slices of eggplant. Cut the chicken breast into thin slices as well. You will put it in the middle.

Prepare The Topping

Take an empty bowl. Add sour cream with salt and pepper to taste. Dice the tomatoes. Mince some parsley and grate the garlic. Now add everything to the bowl and mix thoroughly. You will use this mixture top off the lasagna.

Layer The Eggplant Chicken Breast Lasagna

Take a baking dish and place the first layer of eggplant. Add salt and pepper. Spread some sour cream on top.

Then add chicken breast slices. Add salt and pepper to taste.

Second layer includes chicken breast.

Form the last layer of eggplant with salt and pepper again.

Third layer – eggplant again.

Empty the bowl of mixed sour cream topping on top.

Cover with sour cream topping.

Bake The Dish

Preheat the oven to 380F and let it bake for 50 minutes.

  • 2 tomatoes

  • 2 cloves of garlic

  • 200g sour cream

  • 1 sheaf of parsley
