How To Cook Crispy Cauliflower With Tomato And Cheese

  • This simple recipe requires a few ingredients listed below.
  • In a large pot, heat some water, add salt and bring to a boil. Add the cauliflower florets and cook until tender, for about 5 minutes
  • Dice the onion and sautee on a skillet with 1 tbsp vegetable oil on medium heat until tender.
  • Chop tomato and parsley. When you chop the tomato avoid the liquid part of them. Grate cheese, mince garlic.
  • Grind unsweetened corn flakes.
  • Place the cauliflower into the food processor and process until finely minced.
  • If the minced cauliflower is too wet, squeeze them dry.
  • Transfer the cauliflower into a large mixing bowl and add tomato, onion, cheese, parsley, eggs and semolina. Mix everything well. (You should have a nice, paste-like mixture. If the mixture looks a little too soft and moist – add some more semolina)
  • Form into a cauliflower patties, then coat in grinned unsweetened corn flakes.
  • Fry gently over low heat until golden brown about 3- 5 min each sides.
  • Place the cauliflower cakes on a paper-towel to absorb the excess oil.
  • Serve the fritters with sour cream or your favorite sauce.
