Blueberry Bread Topped With Blueberry Frosting

This blueberry bread is spring inspired. Spring is my favorite season of the year. The smell of flowers in the air, the bright green grass, all the flowers and trees are blossoming that is inspired me to be more creative. So I decided to make blubbery bread topped with blueberry frosting and beautifully decorate it with purple lilac, symbol of spring! The loaf is really moist and fluffy. It is filed with juicy berries in every bite. I promise, when you try it, you can’t stop yourself with one piece. This blueberry bread looks so gorgeous.

How To Cook Blueberry Bread Topped With Frosting

Start with preparing all ingredients.

Preparing Blueberry bread batter:

  • Bit eggs with a sugar well with hand mixer for 3-5 min, until firm foam.
  • Important, that the pattern from the mixer whisk on the surface should remain for 3-4 seconds.
  • Gradually add vegetable oil, buttermilk, and vanilla extract still use mixer. Then add dry ingredients: flour, baking powder, salt.
  • In a small bowl add blueberries and sprinkle with a teaspoon of flour, then stir the blueberries to the flour mixes evenly.
  • Pour batter into prepared loaf pan.
  • Preheat the oven to 350F. Bake in the oven for 50-60 min until a toothpick in the center comes out clean.
  • let the blueberry bread cool down.

Preparing the frosting

  • Place about 1/2 cups of the blueberries in a small food processor or blender and puree until smooth. This should only take a minute or two. Put it on a side.
  • Place the cream cheese, heavy cream and powdered sugar in a mixing bowl and beat until smooth and creamy, then add a blueberry pure, mix it well.
  • Spread blueberry frosting on top of the bread and decorate as you wish.
